Kidney beans are named for its visual resemblance to a kidney. Light Speckled kidney beans are a different variety that carry all the qualities of a kidney bean and can be roasted or mashed and mixed with any meat.
It is said about Beans in general that:-“Beans are rich sources of protein—more than in any other plant food, in fact. They are high in soluble fiber, which helps control blood cholesterol; they're low in calories and fat; and they're good for diabetics, because their balance of complex carbohydrates and proteins provides a steady source of glucose. Also these are great source of starch, B-complex vitamins, iron, potassium, and zinc. The nutrition of kidney beans is rich , the protein contents of kidney beans are higher than chicken , the calcium contents of them are more than 7 times than chicken ,iron contents are four times than chicken and vitamin B contents are much higher than chicken.” Therefore Beans are a healthy alternative to meat.
The Kidney bean with dark red skin is named ‘Chilli bean’. Red kidney beans in India are called Rajma and are an integral part of the cuisine in northern region of India. These vegetable proteins have no fat, which helps prevent heart disease and obesity. Extremely rich in fiber, like all of its cousins in the bean/pea family, kidney beans have a high level of iron, magnesium, phosphorus and vitamin B9. High in potassium and low in sodium, kidney beans have natural diuretic properties.
